Considering that these thermal pasteurization conditions were capable of inactivating 2–4 log10 cycles of other Salmonella strains (Monfort et al., 2012d), the low inactivation level achieved for the highly heat-resistant Salmonella Senftenberg 775 Wsupports its selection as the target Salmonella serotype in the design of alternatives to ultrapasteurization of LWE.
