5. Conclusions
This study confirmed the resistance of bacterial spores to several preservation factors, including PEF, showing that the highest inactivation of spores (3.6 log) occurs when strong processing conditions are applied and the right combinations of preservation
factors are used. Hurdle technology using three preservationfactors, namely electricity, temperature and antimicrobials, proved to be most effective. This treatment might lead to an increase in the shelf-life of milk, as well as an additional margin of safety because B. cereus spores are capable of surviving conventional pasteurization
temperatures.
