3.5. Texture measurements
Our results showed non-significant differences in toughness
between the control sample and various HPP treatments for 20 s
(Fig. 6). The control sample had a large standard deviation and the reason is that the control samples were collected from various part of the fillet, but not from the same location on the fillet. Generally there was a gradual increase in toughness as the pressure was increased. Samples processed at 900 MPa in 10, 30 and 60 s were significantly tougher than samples processed at 400 MPa (data not shown). Each sample was measured in triplicates. Similar effects
