Experiment 4
Meat colour was measured at three sites on 86 cryptorchid carcasses 24 hr post-mortem
using a Minolta chromameter, (model CR-300). These carcasses came from lambs representing
the six genotypes slaughtered in the third year of the overall project, but at a
different time to those in experiment 2. The three sites were the cut surface of the LL, the
surface of the diaphragm and the surface of M. Obliquus externus abdominis after removing
the fascial layer. Each cut surface was allowed exposure to the atmosphere for at
least 30min. pH and muscle temperature of the LL were measured as described in
experiment 2.
