A copper-constantan
thermocouplewas inserted (Omega Engineering Inc., Stamford, CT) into
the geometric center of the steak. Steaks were cooked on clamshellstyle
grills (George Foreman grill Model No. GRP99, Columbia, MO) to
an internal temperature of 71 °C and then removed from the grill and
allowed to cool to room temperature (approximately 21 °C).
