Cocoa powder, as suggested in Fig. 9.3, is not needed to make chocolate. For this, the two important products are the liquor and butter. The first stage of chocolate production involves the mixing of the main ingredients, the proportions of which depend on the chocolate being made. Table 9.2 shows the minimum requirements for chocolate as set out by the Codex Alimentarius (CAC 2003). That requirements are set to such a degree (and this table is only a part of the Codex on chocolate) shows the level of interest in the ‘food of the gods’.
