Also, the data showed that the ratio of poly unsaturated fatty acids and saturated fatty acids was 1.39 (PUFA/SFA = 1.39) (as defined in Table 2), which is the nutritional index widely used to evaluate the nutritional value of fat for human diet. Current nutritional recommendations are that the PUFA/SFA ratio in human diet should be above 0.45 (UK
Department of Health., 1994).
