the present study no significant
difference (P N 0.05) in aw was observed for all three salt types and concentrations
studied (data not shown) suggesting that factors beyond aw
are involved in the observed baroprotection and adds strength to the
observation by Koseki and Yamamoto (2007) that as the saturation of
the treatment suspension increased, the effect of high-pressure induced
inactivation of L. monocytogenes decreases (second hypothesis).
