2.2.1. Single fermentations
The washed cells were inoculated in 400 mL of the pasteurized
peanut-soy milk (2:1). The suspension with inoculated cells was fractionated
in 25 mL portions, placed into 50 mL conical tubes. These
tubes were incubated at 37 °C for up to 24 h and afterwards, the
fermented PSM remained for another 24 h at ±4 °C. The experiments
were performed in three independent assays. For each repetition two
samples were taken at each time (duplicate).
