Introduction
Sliwowica qa˛cka is a strong plum brandy (slivovitz) that is produced in a submontane region of Poland with specific climatic and soil conditions by means of spontaneous fermentation of We˛gierka Zwyk1a plums. The first mention of its production near qa˛cko was made in 1882 when Samuel Grossbard's factory, where Sliwowica Koszerna was manufactured for export mainly to Palestine, was built close to a municipal market on a plot of land leased from the parish priest (Satora and Tuszynski, 2008 ).
