In this study, the lipid extraction technique of UAE was investigated and compared with conventional technique in rice. Evaluation of lipid yield in response to the different factors by single-factor experiment indicated that higher yield was obtained by hexane than petroleum ether and isopropanol under 200 W, 30 °C and 30 min, and the rice lipid yields enhanced with increasing sonication power, temperature and time, respectively. However, too high sonication power, temperature and prolonged time would lead to the decrease of yield. From the response surface methodology, the optimum combination conditions from UAE were hexane, 123 W, 42 °C and 37 min, and there were no differences observed between predicted (77.31%) and experimental yield (76.93%) under optimum parameters. The GC-MS analysis showed that the rice lipid compositions were not significantly affected by UAE. Generally, ultrasound-assisted extraction offered net advantages of low power, temperature, time, solvent consumption and high extraction efficiencies. It is worth noting that, we used one rice cultivar for calculation in this study, further investigations are still needed to verify the optimum extraction parameters using different rice cultivars.
