How are you today? Let’s cut straight to the chase with our recipe of the week because it NEEDS to be shared right.this.second. It was lunch on the weekend and as I was editing the photos in Lightroom, I was getting more and more excited by the second to tell you about it. Here goes.
1. Recipe of the week. In addition to my current avocado obsession, I’ve also been totally into seaweed. I wrote a post a long time ago about why eating seaweed is great for you, and although some types can be difficult to find, I’ve recently discovered that one of my grocery stores carries nori sheets in packs of 10 for about $3.

On the weekend, I bought their last package (and am convinced that I’ve single-handedly cleaned out their stock over the past month) because I’ve been dreaming up a recipe for a giant nori wrap and was determined to make it happen.

Rather than using rice as one of the fillings, this wrap is grain-free. Inspired by the veggie sushi I ate at Crudessence in Montreal, I made a chunky curried hummus-like spread in the food processor and used that as the base for my Big Fat Nori Wraps.

Over the past couple of days, I’ve been growing some sprouts in my sprouter jar, and it just so happened that they were perfectly crunchy at the time I was making my wraps.

One of my pet peeves about nori sheets is that they’re not as big as tortillas, and therefore, it’s difficult to make a big roll with them. However, there is a simple solution for this problem and that’s to stick 2 sheets together using nothing but water and your fingers!
