in view that there were few studies on systematic and comprehensive study was to study the UVeVis absorbance and antioxidant properties of
MRPs as related to the nature of reactants by heating different
model systems under similar conditions according to Ashoor and
Zent (1984). The correspondence analysis, which could be
employed to simultaneously plot the column points and row points
in a single graph to summarize the information contained in a twoway
table, was applied in the investigation of the relationship
between reactants. Additionally, the UVeVis spectral features of
MRPs from different model systems, as well as the relationship
between UVeVis absorbance and antioxidant activity of MRPs,
were also investigated. The antioxidant activity of MRPs was evaluated
by ABTS radical scavenging activity and reducing power.
