or historical knowledge of the performance of the control measure. If
this strategy is used, a process authority needs to ensure that the manufacturing
process meets the product/process conditions that were used
in the previous studies. Questions that must be asked include:
• What parameters were measured in the validation study, including
where were process and product measurements taken.
• Were any parameters changed during the study and, if so, how did
the changes affect the food safety intervention?
• Did the investigators discuss any limitations of the study?
