Eight glycosidic diterpenes, for which there are sweetening properties in the tissues of stevia leaves,have been identified The most desired glycosides are stevioside (5–10% d.w.) and rebaudioside A (2–4% d.w.) Stevia rebaudiana steviosides and related compounds structures presents Figure 1. Stevioside, the main sweetener, which constitutes 60–70% of the total glycoside content present in the leaves and also in lesser amounts in the tissues of Stevia stalks, is 110–270 times sweeter than sucrose.
