Recently, the food industry and the research community showed an increasing interest in active edible films supporting natural antimicrobials, with the objective of enhancing food safety. There are several advantages for considering this strategy for antimicro- bial applications: the incorporation of antimicrobials entrapped in a biopolymeric matrix helps to decrease the rate of diffusion from the surface to the bulk of the food product, thus assisting in the maintenance of high concentrations of the active ingredient in the surface, trend that is positive if the surface is the place where it is required. Its support in a matrix can also diminish the interaction with other food additives and components of the food and with oxygen and moisture of the environment.
