Seibel et al. (2006) reported that the -d-glucopyranoside moiety
at C-4 in cellobiose has lowered its affinity towards the
active site of B. subtilis levansucrase, leading to the formation of
cellobiose-fructose in yield of only 30%. Similarly, Kim, Park, Sinha,
Lim, and Yun (2001) reported that levansucrase from Bacillus sp.
produced acceptor products ranging from DP2 to DP7 with a maximum
yield of 30% when cellobiose was used as acceptor.
