In the case of cold setting,
sample packs were directly kept in the refrigerat or at 4 °C
overnight for proper setting. De- moulding was done after
setting proces s and the products were immedi ately wra pped
with a food wrapper (Saran Kl in wra p) and stored in the
refrigerat or (4 °C) for 11 days. Analysis of samples was
done at an interval of 2 days during the storage period
