. The carbohydrate content in the fruits of Canarium odontophyllum was 19.05% (Chew et al., 2011) and represented a little more than half of that found in the pulp of jatoba. For the seed, they represented the third major component (8.81%), considered an energy source for germination. Mature pumpkins, without fertilizer application, presented an amount of about 37.65% carbohydrate, dry base, proximate to that verified in the pulp (Kong et al., 2011).
