The genotypic variability analysis revealed
that only 2 different mtDNA profiles were present, including that of
the inoculum (QA23), which was present throughout the process,
particularly at the middle and final stages of fermentation,
where it was the only strain detected. At the beginning of fermentation,
S. cerevisiae Sc1 was also present, which was the same
genotype identified during the spontaneous fermentation process
(Table 3).
