For example, starch granules can he dispersed in aqueous solution (usually the granules are pretreated,for example with dimethylsulfoxide, to allow successful dispersion). When a polar substance such as thymol is added, an insoluble amylose complex is formed. This complex can be "recrystallized" to give pure amylose. Amylopectin remains in solution, and can be isolated by freeze drying the supernatant liquid that remains after the amylose complex has been removed by centrifugation. Amylase and amylopectin obtained in this way live up to expectation from their structure, the linear, coiled polymer being insoluble in cold water, and the highly branched polymer being readily soluble.
