The data showed the potential use of wastes from
meat processing and brewery plants as culture media
for a large-scale production of both amylase and protease
by A.niger UO-1 besides substantially reducing the
organic load of wastes. However, studies based on the
use of carbon sources from agro-industrial residues
(wheat bran, rice bran, rice husk, maize bran, etc.) for
amylase and protease production are necessary to optimize
the production of both enzymes in media prepared
with brewery and meat processing wastes.
