3.8. Sensory evaluation
Affective test revealed that hedonic scores of appearance and flavor of OS400EE/K sample aged for 2, 30 and 42 days were not significantly difference (p > 0.05) (Table 4). The scores for texture and overall acceptance significantly decreased over time (p 0.05). Nonetheless, those scores were higher than 4 (neither like nor dislike) at the end of storage, implying acceptable product quality. The results illustrated that the active packaging successfully maintained acceptable organoleptic quality by the end of the stability test.
