Taurine, a sulfur-containing amino acid derived from methionine
and cysteine, was also found in the undigested muscle and the TRMHs
in law quantities. The undigested thornback raymuscle had the highest
taurine content (1.68%), whereas less taurine was found in TRMHCrude
(0.99%) (Table 3). Taurine contents were similar to those reported
by Liaset and Espe in cod and saithe protein hydrolysates [42] and by
Silva et al., in tilapia protein hydrolysates [45]. Taurinemay be a relevant
