non-processed purple corn samples belonging to different
varieties collected in different regions of Mexico were analysed
for their anthocyanin profiles. The purpose was to check if similar
condensed pigments were present in the native corn and, if so,
whether their structure was related with that of free anthocyanins.
The presence of flavanol–anthocyanin condensed pigments
was found in the pericarp of samples A (cv. Arrocillo) and B (cv.
Peruano) and the endosperm of samples A and C (cv. Purepecha).
