Celiac disease (CD) is an immune-mediated enteropathy characterized
by permanent intolerance to gluten (Fasano et al.,
2008) that affects 0.3–1.0% of the world population (Rubio-Tapia
& Murray, 2010). It is believed to be present in up to 1 in 100 of
the population (Walker & Talley, 2011) although only about 10–
15% of affected people are clinically diagnosed. CD affects female
individuals more than male individuals (ratio 2:1) (Polanco,
2008). The first symptoms traditionally occur in childhood, but it
can be diagnosed at any age
