In the final analysis, the main effects were primal, fat level; the model also
tested the fat level × primal interaction; these were analyzed as fixed effects.
Sensory day and order served were defined as random effects. Least
squares means were calculated and when significance was defined in the
Analysis of Variance table, least squares means were separated using the
pdiff function of SAS. The effects of primals and the fat level for lipid derived
volatiles and Maillard derived volatiles were analyzed using JMP®
Software
