In organic chemistry, especially biochemistry, triglycerides
(TGs, also named triacylglycerides, TAGs) are triesters derived
from glycerol and fatty acids. Glycerol (or glycerin) is a simple
polyol compound that has three hydroxyl groups (-OH); and
fatty acids (FAs) are carboxylic acids with a long unbranched
aliphatic tail (chain) which is either saturated or unsaturated.
Most naturally occurring fatty acids have a chain of an even
number of carbon atoms, from 4 to 28 (see Fig. 2).
So, there are many triglycerides depending on the various
combinations of the three fatty acids bonded on the glycerol
