Comparing the results obtained by Silva et al. (2001) for jatoba-do-cerrado (Hymenaea stigonocarpa Mart.) and jatoba-da-mata (Hymenaea stilbocarpa Mart.), it is noted that these species have higher-fat pulp, 3.03 and 2.92%, respectively, compared to 1.94%found for the species examined in this study (H. courbaril L.)
But when it comes to seed, the result was 5.78%, close to that found by Matuda and Maria Netto (2005), whose value was 5.30%.In the study of Luzia and Jorge (2012b) about seeds from non-conventional Brazilian fruits, the lipid content of seeds from cagaita(2.4%), jabuticaba (0.5%), Black plum (1.4%), pitanga (3.2%) and tamarind (3.4%) was also low, similar that shown by the pulp and the seed in this paper.
