Every supply chain is there to serve the final customer, but often chain members do not have
a clear and consistent means of capturing the consumer value and translating it into supply chain measures.
The team members brainstormed the issues of consumer value, categorized them and related them to a set of supply chain key performance indicators (KPI) (Table II).
In this chain, the defined consumer value reflected the requirements of the public sector organization, the chefs and the actual end-consumers.
