When receiving cheese, check for mold-even when it is in airtight
packaging. Mold commonly appears as white, blue, or green fuzzy spots.
Also check for dryness-the cheese will have darker edges if this is the care.
Many processed cheese are dated with sell-by or use-by dates, so
check for one. Make sure the cheese has been kept cold. Only four types
