Gin is actually used as medicine in the past. With development of recipes, gin becomes popular and drunk around the world. Gin is developed into many styles around the world. According to European Union, gin is categorized into 4 legal categories ad follow:
Juniper-flavored spirit drink – this type of gin is produced by “Pot Distill”. Pot Distill will leave many unwanted flavor behind (Nowadays, gin is preferred to be produced by using “Column Distill”). This type of gin uses a fermented grain mash (68% ABV). This type of gin is produced by double distillation. Juniper-flavored spirit drink must be bottled with minimum of 30% ABV. This type of gin might be sold under name “Wacholder” (in German means Juniper). Wacholder is used for any juniper flavored spirit in Germany.
