3. Results and discussion
Pomegranate is an important source of bioactive compounds and
has been used in folk medicine for many centuries. Results on the
chemical nature of aqueous extract obtained from pomegranate fruit
pulp are presented in Figs. 1 and 2. Increasing the level of
pomegranate fruit juice phenolics increased the scavenging activity
(Fig. 1). The radical scavenging activity of the PFJP might be due to its
hydrogen-donating ability of the phenolic hydroxyl groups. In
addition, antioxidants are believed to intercept the free radical
chain of oxidation and to give hydrogen from the phenolic hydroxyl
groups, thereby forming a stable end product that does not initiate or
