Deviation from this as influenced by the addition of LBG and HP treatment is recorded for correlating with rheological and structural aspects. RS dispersions with the added LBG (0.25–1% concentrations) showed a different thermal behavior than the control. The gelatinization temperature range for the RS/LBG mixtures was predominantly increased beyond the nominal gelatinization temperature range (70–90 °C). This increase is attributed to RS-LBG interactions, which produced more stable structures, requiring a higher temperature for disorganization
