2.1. Materials
Native maize starch was obtained from Mahshad starch company.
The mean diameter of granules was 14.47 m as determined by a laser diffraction particle size analyzer.
It had a moisture content of 9.64%, protein of 0.45%, fat of 0.74% and ash of 0.17% as determined by the official methods of AACC 2000 and the total amylose content was 28.30%, according to the method of Morrison and Laignelet .
The analytical grade sucrose and glucose were also supplied by Merck
