On the other hand, at 23 _C storage the frequency of developed fat bloom crystals at the surface and the roughness values were evidently higher for the 15 lm samples compared to the 22 and 40 lm samples.
In addition, the frequency of fat bloom crystals appeared to be higher for the 22 lm samples compared to the 40 lm samples. The differences in migration rate and fat bloom development between the storage temperatures could be explained by a higher liquid fat fraction in the shell and the filling at a higher storage temperature.
