In accordance with the characteristics of the spores, the use of this mild thermal treatment (40 C) did not show a synergistic effect (Fig. 2b). The change of temperature was increased when samples were heated at the inlet at 40 C, with a final value of 70.4 C (D 30.6 C) at 40 kV cm1 and 15 pulses. A higher
temperature (50 C) was tested in combination with the PEF treatment in skim and whole milk to inactivate B. cereus spores; and a temperature of 50 C plus 35 kV cm1 at 10 pulses was able to inactivate almost 3 log of spores in skim milk (Fig. 2b), at a outlet temperature of 78 C. However, some technical problems were observed regardless of the kind of milk. When the outlet temperature was increased to higher than 80 C (outlet temperature),some arcing problems occurred due to bubble formation.
