Artichokes cut after 3 days of storage at 12 ◦C showed a lower value of external appearance score than samples stored at 0 ◦C (Fig. 1), while at times 7 and 7 + 3 no differences were found among samples from artichokes stored at different temperatures. All samples cut after 7 days, and samples cut after 3 days of storage at 12 ◦C, showed appearance score values significantly lower than those cut soon after harvest and stored for 3 days at 5 ◦C (0 + 3), as resulting from the Dunnett test, indicating a negative effect of the time of storage and of the high temperature on this parameter.
