Some of the crops ,such as coconut and breadfruit, grew without any care . But taro called for the most careful cultivation. Earthen banks had to be built up and water let in. Because the Hawaiian had no metal or clay their cooking was very different from ours. Their only containers were made of gourds or of wood. So how could they boil water? How could they cook anything?
To boil, the Hawaiians heated stones in a fire , then dropped them into a calabash full of water. It seems as if their water must have ended up well mixed with mud and ash.
The Hawaiians cooked most things, however, in a primitive sort of oven. Into a hole in the ground the Hawaiians cook put wood, then stones. After his fire had heated the stones, he laid glass on them ,then the things he wanted to cook-taro, breadfruit, sweet potatoes, a whole hog. He covered these with leaves and old mats and let the heat work on them
You notice we referred to the Hawaiian cook as “he”. Women were forbidden to cook in old Hawaii. Perhaps this more than made up for the fact that they were also forbidden to eat some of the choicest food –pork ,bananas, coconut, some kind of fish!
By 1825 practically all the vegetables commonly used in the western worlds were growing in Hawaii and had been added the Hawaiians diet.
But the Hawaiians continued for a long time to cook and eat after their own fashion. Some things they ate raw. One traveler happened to be with King Liholiho and his queen Pauahi when a huge cuttlefish
( a sort of baby octopus) was brought in alive. The queen grabbed it in both hands and bit into it. Black juices and blood gushed over her face and neck, and the long sucking arm of the animal wriggled around her head like snakes. But Pauahi seemed to enjoy it .
The Hawaiians had never heard of the idea that you should only have three meals a day. When there was plenty of food, the common people ate six or eight times. They even time got up in the night to eat. But it food was scarce, they ate only once, or even fasted for several days. Often the chief’s caterer, if he smelled a pig cooking in a poor man’s household, would take it away from him when it was done.
The chiefs were always eating. Wherever they went, servants followed with calabashes. The end product looks and tastes like a cross between apple sauce, mild cheese and library paste. The taste for it has to be acquired-like the taste for blue cheese, snails, or coffee.
The Hawaiians were not hunters, for they had no wild animals until years after Vancouver had landed cattle. They were not farmers in our sense, since they had no cereals-no rice, wheat or other grains. But they were expert fishermen. They knew the habits and habitat of every fish, from the man-eating shark to the humu-humu-nuku-nuku-apua-a—a tiny, brilliantly colored fish with a name longer than the distance from its nose to its tail.
Some fish they took by putting a poison herb under rocks along the shore, cleaning them as soon as they rose to the surface so that the poison would not get into the meat. Others they took with hand nets and baskets, or by picking them out of pools left by the tide. Octopus and bonito were caught by carefully luring them with a cowry.
