3.7. Relation between RS content and different properties
The Pearson correlation coefficients for the relationship
between the different properties of starches modified with CA are
shown in Table 3. Correlations between RS content and structural
parameters were observed. RS was significantly and positively
correlated with DS, but negatively correlated with RC, DH, and had
no correlation with To, Tp and Tc. RS showed a negative relationship
with SF, though it was not significant.
Xie and Liu (2004) concluded that RS increased with an increase
DS, which was in accordance with our results. In the report of
Zhang and Oates (1999), they described that enzyme susceptibility
was influenced by several factors, including the ratio of amylose/
amylopectin, the crystalline structure, endothermic characteristic
