The extraction of antioxidants present in honey, or the
elimination of predominant reducing sugars interference, was
recommended in order to achieve a precise and reliable
determination of honey AO activity (Singleton et al., 1999;
Alvarez-Suarez et al., 2009). An artificial honey solution was
included in the study to evaluate sugars contribution to honey HPS
activity. The natural and artificial honey samples were added in
three successive aliquots of 100 mL into initial peroxide solution.
Polarograms of H2O2 before and after addition of honey samples
were recorded. In Fig. 1 polarograms obtained for white acacia
honey and amber forest honey were compared with the
polarograms obtained for the artificial honey (Gheldof et al.,
2002; Copper et al., 2002).
