At least a ratio SDF/TDF of 0.3 favors the physiological charac- teristics of the SDF, such as reducing the absorption of blood glucose, resulting in better control of insulin secretion, and increased intestinal peristalsis, produc- tion of short chain fatty acids during colonic fermen- tation, and maintenance of a healthy intestinal ecosys- tem, among others (Lunn and Buttriss 2007; Sáyago- Ayerdi and Goñi 2010).
