CAUSE
We noted that there are two grills sections, which will be checked and maintained every
three months.
Before the incident on 28 December 2015, one of the grills malfunctioned and the restaurant
could only use one grill section to cook with.
From the above information, we are of the opinion that grill was being heavily used (due to
the malfunction of the second grill) and grease cleaning was less frequent. During cooking
of food the heat caused the grease within the oven to overheat and catch fire.
SPREAD AND STOP
The fire started at the lower grill and spread vertically to the upper oven.
Further spread was prevented by initial fire fighting operations conducted by the landlord's
security guard. The fire was put out within 5 minutes.
