• All stock items are required to be stored in a secure, locked location, in a dedicated stores area.
• Access to the store area and the individual stores is to be limited to appropriate team members. This will vary from hotel to hotel, but the hotel is required to have a local policy detailing who has access to these areas which needs to include an authorized list of signers and include the storeroom hours. The list of signers, with requisite signatures, and hours must be posted on the storeroom entrance and approved by General Manager in writing. High value items should be kept in locked cages within the relevant store, to ensure increased security.
• Either approved storeroom personnel or food and beverage management must be present while the storeroom is opened. The keys to the stores are to be kept during opening hours with the approved storeroom personnel or food and beverage management.
