In Table 2, the effect of age on the concentration
of cholesterol in yolks (mg/g yolk) and eggs
(mg/egg) is shown for the eggs in each housing
system. The effect of age on both characteristics
was almost identical. The yolk and egg cholesterol
concentration decreased at 50 and 59 weeks of age.
At 68 weeks of age the concentration of cholesterol
increased, and at 75 weeks of age it decreased
again.
