degradation of starch by pancreatic α-amylase was inhibition by all sorghum cultivars except ss-5 and ss-6, whereas extracts from foxtail millet and proso millet exhibited on visible inhibitory effect on α-amylase activity. we also tested the inhibitory activity of sorghum extract against porcine pancreatic and human salivary α-amylase by calculating ic50 values. ss-1, ss-2 and ss-4 exhibitedstronger inhibitory activities against porcine pancreatic α-amylase comparedto human salivary α-amylase, whereas ss-3 more strongly inhibited human salivary α-amylase.
