Hydrocooling treatment is realized by means of chilled water being pumped to spray nozzles and flowing down on the product (showering) or through the immersion of the product in cold water. However, some danger lies in the potential for carrying diseases due to the possible microbiological contamination of the material and leaching some nutrients, particularly in the case of soft fruit. What is more, immersion in hydrocoolers may be used only for material that sinks in water.
