Coconut milk is popular for thai cooking at present, but fresh coconut milk has short shelf life. In order to increasing its shelf life. The preserved coconut milk product were developed. Coconut milk powder or coconut cream powder are one of the favorite product in dehydrated form and it can easily dissolve in and it also equally good as fresh coconut milk for cooking. However it was found that there is some problem about contamination in coconut cream powder. In this study was used to gamma radiated reduce contaminate of product and measure on chemistry analysis, sensory evaluation and microbiological analysis. From the result which conclude that gamma irradiation less than 5 kGy can be considered for decontamination of coconut cream powder.
