Increasing the electrical field strength from 60 to 100
V/cm increased the extraction yield for all moisture
contents. This phenomenon was most pronounced with
raw bran. This finding is significant because enhanced
extractions were thought to be due in part to a rise in
temperature (Lima et al., 2001) but no such temperature
increase was observed in the case of raw bran. This
finding could be important for processes that involve the
extraction of heat labile components.
