The behavior
found for starch films can be explained by the increase of film
hygroscopicity, represented by their higher solubility coefficients
(b). When the glycerol concentration was increased from 20 to 30 g
of glycerol/100 g of dry raw material, the b values increased by
about 40%. The results reported in Table 2 did not show important
differences between the diffusion coefficients of starch films
